The il PANCIOTTO COTTO is a cooked salami of about 1.4 kg, typically produced in northern Italy and is characterized by a sweet and decisive taste. The pork meat is ground, flavored with typical tanning and stuffed in sewn bacon rind. The product is cooked, then cooled and vacuum-packed, to better maintain its organoleptic properties.
RECIPE: il PANCIOTTO is excellent consumed with mashed potatoes or lentils in winter, but it becomes an appetizing summer appetizer if served at room temperature, cut by knife into thick slices or cubes with the accompaniment of vegetables. It can also be a valid alternative to the more classic "bread and salami" if cut into thin slices.... of course always accompanied by a glass of good wine.
